Section 430-Air conditioning unit is observed to be in disrepair and have a temperature of 102 degrees Fahrenheit inside establishment causing some foods to melt and be in poor condition.

6 Non-Critical Violations
Section 110- Mobile unit was found to be operating in a warehouse that was not approved by the Knox County Health Department. Warehouse was found to not have a kitchen or proper equipment to prepare food. Employees were found to be preparing food inside the warehouse and not be in compliance with Plan Review that was submitted for the use of the mobile unit.
Section 112-Employees are found to be using numerous portable propane cooker stands to prepare food inside the warehouse.
Section 352- Bathroom located on the premises is found to have no walls and not be completely enclosed.
Section 346- Hand washing soap is observed to be unavailable in employee bathroom.
Section 347- No hand drying provisions are available in employee bathroom.
Section 295(c)- Two-compartment sink being used to clean utensils and cookware is observed to be heavily soiled with black build up, dirt, and old food debris.
5 Critical Violations
Section 269- Observed no proper ware washing equipment to be available in the warehouse where food is being prepared.
Section 343- No handwashing sink is found to be on the premises where food is being prepared.
Section 322- Two-compartment sink faucet is observed to be in disrepair and non-functional. Direct water lines are observed to be hanging in basin of two compartment sink and not properly plumbed.
Section 177- Observed prepared chicken and rice to be stored on a table in warehouse uncovered and not preventing contamination.
Section 187- Prepared potentially hazardous foods are found to be sitting out at room temperature and temping at 107 degrees Fahrenheit.
Knox County Health Department along with Vincennes Fire Department has given the owners 24 hours to correct all violations.

All previous violations have been corrected.
Knox County Health Department has approved mobile unit to continue to operate. Owners have been advised that all food preparation must be done inside the mobile unit. The warehouse may only be used to hold extra products. Owners have also been advise that the mobile unit must be moved daily. Knox County Health Department will make numerous visits to ensure mobile unit stays in compliance.

Mobile unit is found to have no violations and is continuing to stay in compliance with the Knox County Health Departments regulations.
